- 1 tsp Black pepper (freshly ground)

- 1 tsp Coriander seeds (crushed)
- 2 Bay leaf (crumbled)
- 1 tsp Paprika (optional for color and mild spice) - optional
- 1/2 cup Filtered water (for brining)
- 1 handful Applewood chips (for mild smoking flavor)
- 1 tsp Olive oil (for coating) - optional
